Please help, quick dessert recipe, no carbs!?

I need a dessert recipe for a catering exam. It must take less than 15 mins to prepare and less than 30 mins to make/cook/chill in total and not have any carbohydrates in. If possible, it must show skill, but that's not as important. Please help.Please help, quick dessert recipe, no carbs!?
why not make fresh fruit salad , no carbs looks good and healthy.

well nearly all food has carbs in the only ones that don't are meat,fish and cheese,so a cheese board would a good option if you want no carbs,but you wouldn't be able to serve it with crackers as it would add carbs.





There are some recipes on this site that are low carb,as it would be very hard to do a dessert with 0 carbs,meringues are great they are low carb,no fat and low calorie all at the same time.

LEMON MOUSSE





4 oz cream cheese -- 125gr softened


2 tbsp lemon juice


4 tbsp splenda


1 cup whipping cream


1 grated lemon rind





Beat cream cheese and sweetener until smooth with mixer, then slowly add lemon juice to reduce splashing. Mix mixture until smooth and creamy and there are no lumps. Add whipping cream cream and lemon rind . Beat until fluffy and whipping cream has thickened to a mousse consistency. Mixture should be able to hold soft peaks.



Wow, that's a tough one! I'd suggest warm poached pears with a dollop of mascarpone or creme fraiche. If you've got the time for it, you could whip up a custard to serve with it, but you'll really be against the clock.

You could have a cheese plate. It's nice to have some fruit but that would add carbs. Strawberries or raspberries arn't too bad.
