Plz help, i need an easy and tasty mexican recipe for a dessert?

were havin a tex mex night so either country will do.





Im up on english and french desserts but mexican no go!

Here is a recipe for Fried Ice Cream that isn't really fried, so it's easier. It's traditional at many Mexican restaurants. You can use chocolate and/or caramel sauce instead of (or in addition to, lol) the honey.





1/2 quart vanilla ice cream


2 1/2 cups cornflake cereal, crushed


1 tablespoon butter, melted


2 tablespoons sugar


1 teaspoon cinnamon





1. Make 8 vanilla ice cream balls and freeze on wax-lined cookie sheet for about an hour.


2. Mix remaining ingredients and spread on a cookie sheet to bake at 350掳F until crisp and golden.


(Cooking times will vary according to taste and oven temps.) Let cool.


Roll ice cream balls in the cooled mixture and refreeze for 2 hours more.

Flan is an authentic Mexican dessert and there are many versions. This one is prized for it's simplicity. If you've never made flan before, now is the time to try it.





Prep Time: 20 minutes


Cook Time: 1 hours,


Ingredients:


1 cup and 1/2 cup sugar


6 large eggs


1 14oz can sweetened condensed milk


2 13 oz cans evaporated milk


1 teaspoon vanilla


Preparation:


Preheat oven to 325 degrees. You will need 6 ramekins or other specialty flan cook ware and a large baking pan to put them in.


Pour 1 cup sugar in warm pan over medium heat. Constantly stir sugar until is browns and becomes caramel. Quickly pour approximately 2-3 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides. Reheat caramel if it starts to harden.





In a mixer or with a whisk, blend the eggs together. Mix in the milks then slowly mix in the 1/2 cup of sugar, then the vanilla. Blend smooth after each ingredient is added.





Pour custard into caramel lined ramekins. Place ramekins in a large glass or ceramic baking dish and fill with about 1-2 inches of hot water. Bake for 45 minutes in the water bath and check with a knife just to the side of the center. If knife comes out clean, it's ready.





Remove and let cool. Let each ramekin cool in refrigerator for 1 hour. Invert each ramekin onto a small plate, the caramel sauce will flow over the custard.

Directions:


FOR CAKE:


PREHEAT oven to 375掳 F. Grease and flour 9-inch springform pan.





BEAT egg whites and 1/4 cup sugar in large mixer bowl until stiff peaks form. Combine egg yolks and remaining sugar in medium bowl; beat until light yellow in color. Fold egg white mixture and flour alternately into egg yolk mixture. Pour into prepared pan.





BAKE for 15 to 20 minutes or until just golden and wooden pick inserted in center comes out clean. Remove from oven to wire rack.





FOR CREAM:


COMBINE sweetened condensed milk, heavy whipping cream (1 cup), evaporated milk, brandy and vanilla extract in medium bowl; stir well. Prick top of cake thoroughly with wooden pick. Pour 2 cups cream over cake. Spoon excess cream from side of pan over top of cake. Let stand for 30 minutes or until cake absorbs cream. Remove side of pan.





FOR TOPPING:


BEAT The other 1 cup heavy whipping cream, sugar and vanilla extract in small mixer bowl until stiff peaks form. Spread over top and sides of cake. Serve immediately with remaining cream.

If you're serving mexican food, then I suggest something with fruit that is refreshing and light, maybe a cheesecake, or a fruit sorbet, or baked peaches/pineapple/apples with ice cream, etc.
Deep fry 8'; flour tortillas while holding them down with a ladle to make an ice cream bowl. Then toss them in cinnamon sugar and put ice cream and honey on top.

    EMPANADAS:


    5 cups flour (unsifted)


    1 tablespoon baking powder


    2 teaspoons salt


    1 cup shortening (Crisco preferred)


    1 cup milk


    Mix flour, salt, and baking powder together in a bowl. Cut in shortening until it resembles crumbly meal. Gradually sprinkle in milk stirring until dough clings together. Knead 10 times. Let rest 1/2 hour.


    Filling:





    2 lbs. ground beef


    1/2 teaspoon salt


    1 tablespoon onion powder


    1 teaspoon garlic powder


    1 teaspoon chili powder


    1 tablespoon Worcestershire sauce


    1 to 2 tablespoons tomato paste


    hot sauce (optional)


    Mix ground beef with all the ingredients except tomato paste. Fry slowly in 1 tablespoon oil until cooked. Mash around a bit so it's crumbly. Add 1 to 2 tablespoons tomato paste (so that it's thick), stir very well. Turn off heat and let filling cool. Add as much hot sauce as you like. On a very well-floured surface, roll dough as thick as you would for pie crust (can divide it into 2 parts if desired). Cut 5';circles (using any container with 5'; opening) and place filling on center of each circle. Brush beaten egg on lower edge of circles. Fold over and press edges with fork dipped in flour. Fry in lard about 2 minutes on each side until brown. Make sure there is enough lard to cover the empanadas--- about 3 - 4'; deep.Panama desserts recipes???

    3 eggs


    1 c sugar


    1 c packaged biscuit mix


    1/2 tsp salt


    1 1.2 c chopped pitted dates


    1 c broken California walnuts


    Beat eggs until light; gradually add sugar, beating until thick and lemon colored. Combine biscuit mix and salt. Stir into egg mixture. Add dates and nuts. Pour into greased 9x9 inch square pan. Bake in moderate oven (350 degrees) for 35 minutes. Cool slightly. Cut in 2 inch squares. Makes 18.

    Ingredients


    2 x 450g pkts chocolate-chip cookie dough


    250g pitted dates, coarsely chopped





    Method


    Preheat oven to 180掳C. Line a 16 x 25cm slice pan with non-stick baking paper, allowing the sides to overhang. Roll out half the dough between 2 sheets of non-stick baking paper to form a 16 x 25cm rectangle. Repeat with the remaining dough.


    Place 1 portion of dough in the lined pan and press firmly over the base.


    Scatter the dates over the biscuit base. Top with the remaining dough portion and press firmly to cover the filling. Bake in oven for 25 minutes. Cover with foil and bake for a further 15-20 minutes or until the slice is cooked through. Set aside to cool in the pan before cutting into squares to serve.

    4 fresh dates


    1/2 tsp peanut butter


    1 tbs shredded coconut





    Method


    Use a small, sharp knife to cut dates in half lengthways. Use your fingers to remove the stones. Discard the stones. Spoon peanut butter into each date half. Spread coconut over a large plate. Dip 1 date half, peanut-butter side down, in the coconut to coat. Transfer to a serving plate. Repeat with remaining date halves and coconut. Serve.





    STICKY DATE PUDDING


    Ingredients (serves 8)


    250g pitted dates, chopped


    1 teaspoon bicarbonate of soda


    1 1/2 cups boiling water


    125g butter, softened


    1 cup brown sugar


    1 teaspoon vanilla extract


    2 eggs


    1 3/4 cups White Wings Self-Raising Flour, sifted


    Caramel sauce


    1 cup brown sugar


    300ml thickened cream


    1/2 teaspoon vanilla extract


    60g butter


    Method


    Preheat oven to 180掳C. Grease and line the base of a 7cm deep, 22cm (base) cake pan.


    Place dates and bicarbonate of soda into a bowl. Pour over boiling water. Allow to stand for 20 minutes.


    Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, fold through date mixture and flour until well combined.


    Spoon mixture into prepared cake pan. Bake for 35 to 40 minutes or until a skewer inserted into the centre comes out clean. Turn onto a plate.


    Make sauce Combine all ingredients in a saucepan over medium heat. Cook, stirring often, until sauce comes to the boil. Reduce heat to medium-low. Simmer for 2 minutes.


    Pierce pudding all over with a skewer. Pour 1/2 cup of warm sauce over warm pudding. Stand for 10 minutes. Cut into wedges. Serve with remaining sauce.





    BANANA %26amp; DATE LOAF





    Cooking Time 30 minutes

    Ingredients


    Vegetable oil, to grease


    300g fresh dates, pitted, coarsely chopped


    185ml (3/4 cup) water


    150g butter, chopped


    450g (3 cups) self-raising flour


    155g (3/4 cup, firmly packed) brown sugar


    3 medium (about 300g) overripe bananas, mashed


    3 eggs, lightly whisked


    11/2 tsp vanilla extract


    Icing sugar, to dust





    Method


    Preheat oven to 180掳C. Brush twelve 160ml (2/3-cup) capacity non-stick mini loaf pans with oil to lightly grease. Place the date, water and butter in a medium saucepan and bring to the boil over medium heat. Remove from heat and stir until butter melts. Set aside for 5 minutes to cool slightly.


    Combine the flour and sugar in a large bowl. Make a well in the centre. Gradually stir in the date mixture, banana, egg and vanilla until just combined.


    Spoon batter among prepared pans. Bake in preheated oven for 25 minutes or until golden brown and a skewer inserted into the centres comes out clean. Remove from oven and set aside in the pans for 2-3 minutes before turning onto a wire rack to cool.


    Arrange banana %26amp; date loaves on a serving platter. Dust with icing sugar and serve immediately.





    DATE PANCAKES WITH CARAMEL SAUCE





    Preparation Time 15 minutes

    Ingredients (serves 4)


    125g pitted dates, finely chopped


    1/2 cup (125ml) boiling water


    2 cups (300g) self-raising flour


    1/2 cup (75g) plain flour


    2 tbs brown sugar


    1/2 tsp mixed spice


    2 cups (500ml) milk


    80g butter, melted, cooled


    1 egg, whisked





    Caramel sauce


    1 cup (250ml) cream


    60g butter


    1/2 cup (110g) brown sugar


    Vanilla ice cream, to serve





    Method


    Place dates in a small heatproof bowl. Pour over boiling water. Set aside for 10 minutes until soft.


    Sift flours, sugar and spice in a large bowl. Add milk, butter, egg and date mixture. Whisk until well combined.


    Brush two small non-stick frying pans with a little of the extra melted butter. Heat over medium heat. Add 1/3 cup of mixture to each pan. Cook for 2 minutes, or until bubbles appear on the surface. Carefully turn over and cook for 1 minute.


    Transfer pancakes to a plate and wrap loosely in a clean tea towel to keep warm. Repeat with remaining batter, greasing pan between each batch. If you find the pan is getting too hot, reduce heat slightly.


    To make the caramel sauce, place cream, but

    1 1/2 cups chopped dates


    3/4 cup boiling water


    1/4 cup Myers dark rum


    1/2 cup chopped nuts


    3/4 cup lightly packed brown sugar


    1 egg, beaten

    1 tsp. vanilla


    2 cups King Arthur white whole wheat flour


    1/4 cup butter, melted


    1 tsp. baking powder


    1/2 tsp. baking soda


    1/2 tsp. salt





    Preheat oven to 350F degrees.


    Combine dates, boiling water and rum.





    Leave dates to soak until mixture has cooled. Add nuts, sugar, egg, butter and vanilla. Combine remaining dry ingredients; add to date mixture. Stir just until well mixed.





    Pour into a greased 9x5'; loaf pan.





    Bake 50-55 minutes.






    Bacon and Date Appetizer





    1 (8 ounce) package pitted dates


    4 ounces almonds


    1 pound sliced bacon








    Preheat the broiler.


    Slit dates. Place one almond inside each date. Wrap dates with bacon, using toothpicks to hold them together.


    Broil 10 minutes, or until bacon is evenly brown and crisp.

    Romanian Sweet Pasta





    1 lb Eggless pasta


    12 c Water


    1 c Maple syrup


    1/2 c Ground walnuts; or 1/3 cup

    1/2 ts Lemon rind; minced


    1 1/2 c Raisins


    1/2 ts Powdered cloves


    1 ts Cinnamon





    Instructions:


    Cook pasta in boiling water until done. Drain. Heat maple syrup and walnuts
