Chocolate Pudding

Cocoa powder and chocolate chips give this luscious pudding a double-dose of chocolate flavor.

Makes 4 servings, about 1/2 cup each

ACTIVE TIME: 15 minutes

TOTAL TIME: 15 minutes

EASE OF PREPARATION: Easy

1 12-ounce can evaporated skim milk

1/3 cup packed light brown sugar

1 large egg

3 tablespoons unsweetened cocoa powder

1 tablespoon cornstarch

3 tablespoons semisweet chocolate chips (1 ounce)

1 teaspoon vanilla extract

1. Whisk milk, brown sugar, egg, cocoa and cornstarch in a medium saucepan. Cook over medium-low heat, whisking constantly, until the mixture bubbles and thickens, 3 to 5 minutes.

2. Add chocolate chips and vanilla; stir until the chips have melted. Transfer the pudding to a bowl and cover with wax paper to prevent a skin from forming. Refrigerate until you are ready to serve it.

We had family over tonight and my sister in law brought the yummiest and easiest cake ever. Get two boxes of instant pudding (this one was vanilla) and mix them with 3 cups of milk (she used non-fat). Thaw and then fold in one whole container of Cool Whip, until combined. In a 13x9 cake pan, put down a layer of graham crackers, to cover the whole bottom. Layer the pudding mixture on top, and repeat for 4 layers of crackers and 3 layers of pudding (ending with graham crackers on top). Use one tub of pre-made icing (she used chocolate) and heat it in the microwave for about 20 seconds, until it's easy to spread. Spread a thin layer on the top of the last graham cracker layer, and refrigerate until it sets.
