Ingredients

1 Roll refrigerator slice %26amp; bake sugar cookie dough

1 pkg (8 oz) cream cheese

1/2 cup Sugar

1 cup (1/2 pint) heavy cream

1 tsp Vanilla

Fresh fruit, as desired: Strawberries, Kiwifruit, oranges, grapes, whole berries, cherries, peaches, apricots, plums, bananas

1/2 cup Apricot jam

1 tsp Orange juice or orange flavored liquiur

Preparation

Lightly grease a pizza pan. Slice cookie dough ~ 1/8 inch thick. Distribute evenly over surface of pan. Lightly press edges of cookies together to make a smooth crust. Bake at 375 for 12-15 min or until edges just begin to brown. Remove from oven %26amp; press crust litely with bottom of a custard cup to make a flat bottom %26amp; a ridge all around the edge to hold the filling. Place on wire rack to cool completely.

Soften cream cheese. Blend in sugar %26amp; beat until fluffy. Whip cream. Add vanilla. Combine whipped cream with cream cheese until smooth. Spread evenly over cookie crust.

Arrange fruit in circles on topping. Starting at the outside edge and working toward the center. The strawberries should be cut in half; the kiwi peeled, and sliced thinly; oranges peeled, membrane cut away and thinly sliced; bananas peeled and sliced; cherries, pitted and grapes seeded.

Heat jam over simmering water or in the microwave. Press thru a sieve to remove pulp. Thin with orange juice or orange flavored liqueur. Use a small brush to litely coat all the fruit with this glaze.

Refrigerate until serving time.
