Plz help, i need an easy and tasty mexican recipe for a dessert?

were havin a tex mex night so either country will do.





Im up on english and french desserts but mexican no go!

Here is a recipe for Fried Ice Cream that isn't really fried, so it's easier. It's traditional at many Mexican restaurants. You can use chocolate and/or caramel sauce instead of (or in addition to, lol) the honey.





1/2 quart vanilla ice cream


2 1/2 cups cornflake cereal, crushed


1 tablespoon butter, melted


2 tablespoons sugar


1 teaspoon cinnamon





1. Make 8 vanilla ice cream balls and freeze on wax-lined cookie sheet for about an hour.


2. Mix remaining ingredients and spread on a cookie sheet to bake at 350掳F until crisp and golden.


(Cooking times will vary according to taste and oven temps.) Let cool.


Roll ice cream balls in the cooled mixture and refreeze for 2 hours more.

Flan is an authentic Mexican dessert and there are many versions. This one is prized for it's simplicity. If you've never made flan before, now is the time to try it.





Prep Time: 20 minutes


Cook Time: 1 hours,


Ingredients:


1 cup and 1/2 cup sugar


6 large eggs


1 14oz can sweetened condensed milk


2 13 oz cans evaporated milk


1 teaspoon vanilla


Preparation:


Preheat oven to 325 degrees. You will need 6 ramekins or other specialty flan cook ware and a large baking pan to put them in.


Pour 1 cup sugar in warm pan over medium heat. Constantly stir sugar until is browns and becomes caramel. Quickly pour approximately 2-3 tablespoons of caramel in each ramekin, tilting it to swirl the caramel around the sides. Reheat caramel if it starts to harden.





In a mixer or with a whisk, blend the eggs together. Mix in the milks then slowly mix in the 1/2 cup of sugar, then the vanilla. Blend smooth after each ingredient is added.





Pour custard into caramel lined ramekins. Place ramekins in a large glass or ceramic baking dish and fill with about 1-2 inches of hot water. Bake for 45 minutes in the water bath and check with a knife just to the side of the center. If knife comes out clean, it's ready.





Remove and let cool. Let each ramekin cool in refrigerator for 1 hour. Invert each ramekin onto a small plate, the caramel sauce will flow over the custard.

BAKE for 15 to 20 minutes or until just golden and wooden pick inserted in center comes out clean. Remove from oven to wire rack.





FOR CREAM:


COMBINE sweetened condensed milk, heavy whipping cream (1 cup), evaporated milk, brandy and vanilla extract in medium bowl; stir well. Prick top of cake thoroughly with wooden pick. Pour 2 cups cream over cake. Spoon excess cream from side of pan over top of cake. Let stand for 30 minutes or until cake absorbs cream. Remove side of pan.





FOR TOPPING:


BEAT The other 1 cup heavy whipping cream, sugar and vanilla extract in small mixer bowl until stiff peaks form. Spread over top and sides of cake. Serve immediately with remaining cream.

    5 cups flour (unsifted)


    1 tablespoon baking powder


    2 teaspoons salt


    1 cup shortening (Crisco preferred)


    1 cup milk


    Mix flour, salt, and baking powder together in a bowl. Cut in shortening until it resembles crumbly meal. Gradually sprinkle in milk stirring until dough clings together. Knead 10 times. Let rest 1/2 hour.


    Filling:





    2 lbs. ground beef


    1/2 teaspoon salt


    1 tablespoon onion powder


    1 teaspoon garlic powder


    1 teaspoon chili powder


    1 tablespoon Worcestershire sauce


    1 to 2 tablespoons tomato paste


    hot sauce (optional)


    Mix ground beef with all the ingredients except tomato paste. Fry slowly in 1 tablespoon oil until cooked. Mash around a bit so it's crumbly. Add 1 to 2 tablespoons tomato paste (so that it's thick), stir very well. Turn off heat and let filling cool. Add as much hot sauce as you like. On a very well-floured surface, roll dough as thick as you would for pie crust (can divide it into 2 parts if desired). Cut 5';circles (using any container with 5'; opening) and place filling on center of each circle. Brush beaten egg on lower edge of circles. Fold over and press edges with fork dipped in flour.     Beat eggs until light; gradually add sugar, beating until thick and lemon colored. Combine biscuit mix and salt. Stir into egg mixture. Add dates and nuts. Pour into greased 9x9 inch square pan. Bake in moderate oven (350 degrees) for 35 minutes. Cool slightly. Cut in 2 inch squares. Makes 18.

    Preheat oven to 180掳C. Line a 16 x 25cm slice pan with non-stick baking paper, allowing the sides to overhang. Roll out half the dough between 2 sheets of non-stick baking paper to form a 16 x 25cm rectangle. Repeat with the remaining dough.


    Place 1 portion of dough in the lined pan and press firmly over the base.


    Scatter the dates over the biscuit base. Top with the remaining dough portion and press firmly to cover the filling. Bake in oven for 25 minutes. Cover with foil and bake for a further 15-20 minutes or until the slice is cooked through. Set aside to cool in the pan before cutting into squares to serve.

Dip 1 date half, peanut-butter side down, in the coconut to coat. Transfer to a serving plate. Repeat with remaining date halves and coconut. Serve.

    250g pitted dates, chopped


    1 teaspoon bicarbonate of soda


    1 1/2 cups boiling water


    125g butter, softened


    1 cup brown sugar


    1 teaspoon vanilla extract

    1 3/4 cups White Wings Self-Raising Flour, sifted


    Caramel sauce


    1 cup brown sugar


    300ml thickened cream


    1/2 teaspoon vanilla extract


    60g butter


    Method


    Preheat oven to 180掳C. Grease and line the base of a 7cm deep, 22cm (base) cake pan.


    Place dates and bicarbonate of soda into a bowl. Pour over boiling water. Allow to stand for 20 minutes.


    Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, fold through date mixture and flour until well combined.


    Spoon mixture into prepared cake pan. Bake for 35 to 40 minutes or until a skewer inserted into the centre comes out clean. Turn onto a plate.


    Make sauce Combine all ingredients in a saucepan over medium heat. Cook, stirring often, until sauce comes to the boil. Reduce heat to medium-low. Simmer for 2 minutes.


    Pierce pudding all over with a skewer. Pour 1/2 cup of warm sauce over warm pudding. Stand for 10 minutes. Cut into wedges. Serve with remaining sauce.

    Vegetable oil, to grease


    300g fresh dates, pitted, coarsely chopped


    185ml (3/4 cup) water


    150g butter, chopped


    450g (3 cups) self-raising flour


    155g (3/4 cup, firmly packed) brown sugar


    3 medium (about 300g) overripe bananas, mashed


    3 eggs, lightly whisked


    11/2 tsp vanilla extract


    Icing sugar, to dust





    Method


    Preheat oven to 180掳C. Brush twelve 160ml (2/3-cup) capacity non-stick mini loaf pans with oil to lightly grease. Place the date, water and butter in a medium saucepan and bring to the boil over medium heat. Remove from heat and stir until butter melts. Set aside for 5 minutes to cool slightly.


    Combine the flour and sugar in a large bowl. Make a well in the centre. Gradually stir in the date mixture, banana, egg and vanilla until just combined.


    Spoon batter among prepared pans. Bake in preheated oven for 25 minutes or until golden brown and a skewer inserted into the centres comes out clean. Remove from oven and set aside in the pans for 2-3 minutes before turning onto a wire rack to cool.


    Arrange banana %26amp; date loaves on a serving platter. Dust with icing sugar and serve immediately.

    125g pitted dates, finely chopped


    1/2 cup (125ml) boiling water


    2 cups (300g) self-raising flour


    1/2 cup (75g) plain flour


    2 tbs brown sugar


    1/2 tsp mixed spice


    2 cups (500ml) milk


    80g butter, melted, cooled


    1 egg, whisked





    Caramel sauce


    1 cup (250ml) cream


    60g butter


    1/2 cup (110g) brown sugar


    Vanilla ice cream, to serve





    Method


    Place dates in a small heatproof bowl. Pour over boiling water. Set aside for 10 minutes until soft.


    Sift flours, sugar and spice in a large bowl. Add milk, butter, egg and date mixture. Whisk until well combined.


    Brush two small non-stick frying pans with a little of the extra melted butter. Heat over medium heat. Add 1/3 cup of mixture to each pan. Cook for 2 minutes, or until bubbles appear on the surface. Carefully turn over and cook for 1 minute.


    Transfer pancakes to a plate and wrap loosely in a clean tea towel to keep warm. Repeat with remaining batter, greasing pan between each batch. If you find the pan is getting too hot, reduce heat slightly.

    Bacon and Date Appetizer





    1 (8 ounce) package pitted dates


    4 ounces almonds


    1 pound sliced bacon








    Preheat the broiler.


    Slit dates. Place one almond inside each date. Wrap dates with bacon, using toothpicks to hold them together.

    1 lb Eggless pasta


    12 c Water


    1 c Maple syrup


    1/2 c Ground walnuts; or 1/3 cup

    Pies:- Upside-Down Apple Pecan


    1 cup chopped pecans


    1/3 cup margarine, melted


    6 cups thinly sliced, peeled apples


    2 Tablespoons flour


    1/2 cup firmly packed brown sugar


    Crust for 2 crust pie


    1/4 cup white sugar


    1/8 teaspoon nutmeg


    1/2 teaspoon cinnamon


    Preheat oven to 350 degrees


    In 9-inch deep dish pie pan, combine pecans and brown sugar, pour melted margarine evenly over nuts and brown sugar. Place bottom crust over pecan mixture in pan.


    In large bowl combine apples and remaining ingredients, mix lightly. Spoon into crust lined pan. Top with remaining crust, fold edge of top crust under bottom crust and seal edges. Cut slits in top crust. Cover edge with foil and bake 20 minutes. Remove foil and bake 20 - 30 minutes longer, until apples are tender and crust is golden brown.


    Cool for 5 minutes. Place serving plate over pie and invert. Replace any nuts that stay in pan.

    INGREDIENTS:


    1 chocolate cake, 13 x 9-inches, cooled, cut in cubes


    1/2 cup Kahlua


    1 package chocolate instant pudding, prepared


    12 ounces Cool Whip


    1 chocolate toffee candy bar (Skor)


    PREPARATION:


    Assemble in a 2-quart bowl:


    Put half of the cake cubes in the bottom of the bowl then pour half of the Kahlua over the cake. Spread half of the pudding over the cake and Kahlua then spread half of the Cool Whip over the pudding.





    Repeat layers then break the Skor bar up and sprinkle pieces over the top.

    Heat until the chocolate and butter have melted, stirring occasionally.


    Pour the chocolate mixture into a large bowl. Using an electric mixer on low speed, gradually beat in the sugar. Continue beating until the sugar has dissolved.


    Raise the speed to medium and add the sifted dry ingredients. Mix well, then beat in the eggs and vanilla until thoroughly blended.


    Pour the batter into a generously greased 3-quart bundt pan that has been dusted lightly with cocoa powder or flour. Adjust rack so cake will bake in top half of oven. Bake for about 1 hour 20 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

    This is a great recipe I've made it several times and always comes out good,I use ';I cant believe its not butter';, or butter flavored margarin instead of butteras it has a higher smoke point than butter and makes for a more smoother creamier end result, I also use a hand mixer to stir the fudge with on the stove top this keeps it from burning and also incorporates a lot of air into the mix keeping it nice and fluffy.another trick is to keep a pastry brush with a cup of water to brush down the sides of the pan to keep the sugar from cristalizing on the sides and getting into the candy, also use a good non-stick thick bottom pan helps,i usually make a double batch and split it up at the very end when you add the nuts and add a about a shot of different liquers, peppermint, rum ,gran marinia,rasberry etc..and seperate into different glass cake pans lined with butter or margarin......

    LINE 9-inch square pan with foil, with ends of foil extending over sides of pan; set aside. Place sugar, butter and evaporated milk in large heavy saucepan. Bring to full rolling boil on medium heat, stirring constantly. Boil 4 min. or until candy thermometer reaches 234掳F, stirring constantly to prevent scorching. Remove from heat.


    ADD chocolate and marshmallow creme; stir until completely melted. Add walnuts and vanilla; mix well.


    POUR immediately into prepared pan; spread to form even layer in pan. Let stand at room temperature 4 hours or until completely cooled; cut into 1-inch squares. Store in tightly covered container at room temperature.

    1 box (1-pound 2 1/4-ounce) moist white cake mix


    1 1/4 cups extra dry Champagne


    1/3 cup vegetable oil


    3 large egg whites


    1 can whipped white frosting


    1/4 teaspoon Champagne flavoring


    Silver mini disco balls, optional


    Silver Dragees, optional, if available in your area


    Silver edible glitter, optional





    Preheat the oven to 350 degrees F. Lightly coat the bottom of a 9 by-13-inch cake pan with cooking spray.


    In a large mixing bowl combine the cake mix, Champagne, vegetable oil, and egg whites. Beat on low speed with an electric mixer until just combined. Scrape down the sides of the bowl with a rubber spatula and continue beating on medium speed for 2 minutes. Pour into the prepared cake pan and bake for 30 to 35 minutes, or until a toothpick inserted into the cake comes out clean. Remove it from the oven and cool completely.


    Empty the frosting into a small bowl and add the Champagne flavoring. Stir to combine and set aside.

    2 whole chicken breasts


    2 (10 1/2 oz.) cans cream of chicken soup


    1 pt. sour cream


    14 oz. can chopped green chiles


    Vegetable oil


    1 doz. corn tortillas


    3/4 c. onion


    3 c. Cheddar or Jack cheese, grated


    Sliced olives





    Boil chicken until tender, remove from bone and chop. Mix meat with soup, sour cream and chiles.


    Heat oil in pan. Dip each tortilla in oil until softened and drain on paper towels.





    Spread a thin layer of cream mixture over the bottom of 9x12 inch pan. Spread equal amounts of cream mixture down the middle of each tortilla (reserve some mixture for top). Sprinkle with chopped onion and cheese.





    Roll up tortillas and place them seam side down in prepared pan. Pour remaining mixture over the top of the tortillas and sprinkle with remaining cheese. Bake at 350 degrees for 25-30 minutes. Garnish with olives and chiles. You may wish to prepared ahead of time and refrigerate before baking.

    1 c. water


    3/4 c. sour cream

    FROSTING:





    1/3 c. butter, softened

    Peel and slice half a kilo of onions, sautee in a bit of butter %26amp; olive oil over low heat until soft and a light brown colour, let cool a little, add 2 tsp of cumin seeds and stir in a pot of sour cream, pepper and salt to taste. Spread this mixture on a pizza dough base (plain, NO tomato etc either make your own or buy plain pizza dough), bake at 180 C until set (btw 20/30 mins) Crimp up the dough edges to stop filling running off before baking! Works well when done on a large tray and is delicious hot or cold.

    Beat on a platter the whites of ten eggs to a stiff froth. Stir into them one and one-half goblets of flour, sifted six times, adding a teaspoonful of cream of tartar in last sifting. Bake immediately in three large jelly cake tins. Use only two of these, and reserve the other for a strawberry or any other kind of fruitcake.





    For filling take one pint of very rich cream, add to it two tablespoonfuls of pulverized sugar and a teaspoonful of vanilla. Whip to a stiff froth and color pink with Dr. Price's fruit coloring. When the cakes are cold, spread between the layers and pile also on top of the cake.





    Before you begin to whip the cream see that it is very cold. It should be set in a bowl of ice while whipping, especially in the summer.

    Take three eggs and one cup of pulverized sugar.     Ribbon Cake Recipe


    Two cupfuls of sugar, one of butter, one of milk, four of flour (rather scant), four eggs, half a teaspoonful of soda, one of cream of tartar. Beat the butter to a cream. Add the sugar, gradually, beating all the while; then the flavoring (lemon or nutmeg). Beat the eggs very light. Add them and the milk. Measure the flour after it has been sifted. Return it to the sieve, and mix the soda and cream of tartar with it. Sift this into the bowl of beaten ingredients. Beat quickly and vigorously, to thoroughly mix, and then stop.





    Take three sheet pans of the same size, and in each of two put one-third of the mixture, and bake. To the other third add four teaspoonfuls of cinnamon, a cupful of currants and about an eighth of a pound of citron, cut fine. Bake this in the remaining pan. When done, take out of the pans. Spread the light cake with a thin layer of jelly, while warm. Place on this the dark cake, and spread with jelly. Place the other sheet of light cake on this. Lay a paper over all, and then a thin sheet, on which put two irons [or something heavy]. The cake will press in about two hours.

    Cream well half a cup butter, add a cup and a half of sugar, half a cup cold water, two cups flour sifted twice with two teaspoonfuls baking powder, a teaspoonful lemon extract, and the stiffly beaten whites of six eggs.     find an apple cake recipe on any recipe site (it should include cinnamon and vanilla, but substitute whatever they list for vanilla as 1 Tbs maple syrup) for the cake. pretty much all the regular apple cake recipes turn out the same, may want to add a TB of milk too to make it extra moist





    for the crumb topping, find the betty crocker recipe for apple crisp. you will make it as listed MINUS THE APPLES. just put the crumb mixture in small clumps on a pan and bake it in the oven for 25-30 mins.





    for the caramel sauce, melt 4TB margarine, 1TB maple syrup, 1/3 c brown sugar and 2TB milk or coffee cream or whipping cream(recommended) and a dash of salt. boil and stir constantly for 3 mins, let sit for 3 mins in the fridge. boil again for 3 more mins and let cool for 3 mins. (you will want to make this each time you serve the cake, i mean if you have leftovers, you will want to make another batch of this...this makes about 4 servings worth)

    1 kg mixed dried fruit


    2 cups orange juice


    2 1/2 cups self raising flour


    2 teaspoons each: mixed spice, essence of choice


    Method


    Soak the fruit in orange juice overnight.

    The next day add self raising flour spice and essences as desired.

Cook on low heat until sugar is dissolved, stirring constantly with wire whisk. Add chocolate and salt; increase heat to medium. Continue cooking until chocolate is completely melted and mixture just comes to boil, stirring constantly. Remove from heat. Add butter; stir until melted. Transfer mixture to large bowl. Refrigerate 15 min. or until cooled, stirring occasionally. (Mixture can still be slightly warm to the touch.) Add eggs; mix well.


    Beat whipping cream in small bowl with electric mixer on high speed until soft peaks form. Add to chocolate mixture; stir gently until well blended. Spoon into prepared pan. Place pan in larger shallow baking pan, then place on center rack in oven. Carefully pour boiling water into larger pan to come halfway up side of springform pan.


    Bake 45 min. or until center is set. (Top will feel slightly firm to the touch.) Remove springform pan to wire rack. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Cover top with plastic wrap. Refrigerate 4 hours or overnight. Garnish with chocolate curls, if desired. Store leftover cake in refrigerator
    get a pancake, spread chocolate sauce across it, then slice up some banana and put it on top evenly, roll it up, then drizzle with maple syrup, with a dollop of ice cream on the side, then put in the microwave for 10 seconds (no more than that or the ice cream will completely melt), the choc sauce melts and blends with the banana, and the maple syrup soaks into the pancake.

    and all you do is mix all the ingredients together apart from the grated apple and cinnamon. put half in a 9 inch round deep tin then layer the apple and cinnamon on top of that , then on top of that the rest of the cake mix. put in oven for 1 1/4 to 1 1/2 hours at 180 . yum!
    I like making baklava. It is time consuming, and expensive, but it's great stuff!

    1 lemon, juiced


    1/4 cup olive oil


    1/4 cup soy sauce


    1 teaspoon dried oregano


    3 cloves garlic, crushed


    4 pounds pork tenderloin, cut into 1 inch cubes


    2 medium yellow onions, cut into 1 inch pieces


    2 green bell peppers, cut into 1 inch pieces

    In a large glass bowl, mix together lemon juice, olive oil, soy sauce, oregano, and garlic; add pork, onions, and green peppers, and stir to coat. Cover, and refrigerate for 3 hours.





    Preheat grill for medium-high heat. Thread pork, peppers, and onions onto skewers.





    Lightly oil grate. Cook for 10 to 15 minutes, or to desired doneness, turning skewers frequently for even cooking.

    Black Cod With Miso





    4 black cod fillets, about 1/2 pound each


    3 cups Nobu-style Miso, recipe follows


    1 stalk hajikami





    Pat the fillets thoroughly dry with paper towels. Slather the fish with Nobu-style miso and place in a non-reactive dish or bowl and cover tightly with plastic wrap. Leave to steep in the refrigerator for 2 to 3 days.





    Preheat the oven to 400 degrees F. Preheat a grill or broiler. Lightly wipe off any excess miso clinging to the fillets but don't rinse it off. Place the fish on the grill, or in a broiler pan, and grill or broil until the surface of the fish turns brown. Then bake for 10 to 15 minutes.





    Arrange the black cod fillets on individual plates and garnish with hajikami. Add a few extra drops of Nobu-style miso to each plate.





    Nobu Style Miso:


    1/2 cup sake


    1/2 cup mirin


    1/4 cup water


    1/2 cup plus 1 tablespoon sugar


    1 1/2 cups white miso





    In a medium saucepan combine the sake and mirin and carefully flambe. When the flames die out, add the water and 1/2 cup sugar. Stir until the sugar dissolves. Stir in the miso and, using an immersion blender, dissolve the miso into the liquid. Transfer the mixture to a double boiler and cook until caramel in color and all of the lumps are gone, abut 45 minutes. Cool.





    Turn the heat down to low and add the miso paste, mixing with a wooden spoon. When the miso has dissolved completely, turn the heat up to high again and add 1 tablespoon of sugar, stirring constantly with the wooden spoon to ensure that the bottom of the pan doesn't burn. Remove from heat once the sugar is fully dissolved. Cool to room temperature.
    BARBECUED BEEF RIBS





    This is a succulent recipe for barbecued beef ribs.





    8 lb. beef ribs from standing rib roast


    1 c. chopped onion


    1 tsp. instant minced garlic


    1/4 c. oil


    2 tsp. prepared mustard


    1 c. tomato puree


    2 c. sugar


    2 tbsp. soy sauce


    1 c. white vinegar


    2 bay leaves


    1 tsp. hot pepper sauce


    1 tsp. barbecue spice (optional)


    2 tsp. salt





    Arrange beef ribs on rack in baking pan. Saute onion and garlic in oil until golden. Add mustard, tomato puree, sugar, soy sauce, vinegar, bay leaves, hot pepper sauce, barbecue spice and salt and simmer about 15 minutes. Strain.


    Brush barbecue sauce generously over beef ribs, covering them thoroughly. Bake at 375 to 400 degrees for 45 minutes, basting frequently with sauce until beef ribs are tender and well done. Store any remaining sauce, covered, in refrigerator.

    Burgers are always nice (I hope you are not a Vegetarian/Vegan).





    Fort the burgers, you need some meat. It's good to use a ground chuck and a ground sirloin.





    Put those in a bowl.





    Add in 6 Egg Yolks, some Salt %26amp; Pepper, and some BBQ Sauce (any other kind of suace will work).





    Mash that all up.





    Then just simply cook them. If you have a grill or like a grill skillet use that, but if you don't then you can just cook them in a pan.

    2 lbs of skirt steak, cut in long strips


    2 lg onions sliced into long strips

    2 cans of refried beans

    4 tomatoes diced


    1-2 jalepenos diced


    1 bag of Mexican flavored cheese


    1 lg container of sour cream


    1 tbls of adobo


    1 tbls of lemon pepper


    1 tbls of onion powder


    1 tbls of garlic powder


    1 tbls of fajita seasoning


    1tsp of steak seasoning


    3 dashes of hot sauce


    1-2 packages of lg flour tortillas








    In a large skillet, fry together the skirt steak, onions, red and green peppers, 2 of the diced tomatoes, the jalapenos, the dry seasonings and the hot sauce. Once the meat is cooked through and the vegetables are softened add a little of the cheese. When the meat is almost done cooking, warm up the refried beans and tortillas. Assemble like a taco with the remaining tomatoes, lettuce, sour cream and cheese.








    Note: you can substitute the skirt steak for any kind of meat.





    Mom鈥檚 taco salad








    2 lbs of ground beef, browned and drained


    1 head of lettuce chopped


    4 tomatoes chopped small and seeded


    1 bag of tortilla chips


    2 container of sour cream


    陆 package of taco seasoning


    1 bag of taco flavored shredded cheese


    1 tsp of adobo


    1 tsp of lemon pepper


    1 tsp of California style onion powder


    1 tsp of garlic powder








    Brown the ground beef in a large skillet with the adobo, lemon pepper, California style onion powder, and the garlic powder. Drain well. Open a small hole in the top of the tortilla chip bag and smash them down into small bite size or smaller. Pour the chips into a large casserole dish. Lay the browned beef over the chips evenly. Add the taco seasoning to the sour cream and spread mixture over the meat evenly. Add the shredded lettuce onto the sour cream mixture. Spread the chopped and seeded tomatoes over the lettuce, if you seed them it will keep the lettuce from becoming soggy. Sprinkle the entire dish with the Mexican flavored cheese. Dish it onto a plate and add more sour cream for those who like a lot of it.








    Note: Pre slicing the lettuce and tomatoes, and mixing the taco seasoning will save time. You don鈥檛 want to crush the tortilla chips until you just put them in the dish. They will go stale and soft if opened too soon.

    just chop your favorite veggies and stirfry in a tablespoon of butter till hot and crisp. throw in ALL your favorites including one finely chopped Granny Smith apple (just add the apple to the stirfry last) broccoli, carrots, onions, garlic, colliflower, squash, bellpeppers (all colors). also, at the end of the cooking process throw in some shrimp!!! ummmm! delish!!!!!

    Indgredients:


    2 boxes vanilla pudding


    1 large container Cool Whip


    1 can Eagle Brand milk


    1 16 oz container Sour cream


    2 boxes vanilla wafers

    Follow the instructions on the box for vanilla pudding, and add Cool Whip, Eagle brand milk, and sour cream. Mix well, and set aside. In a separate bowl layer vanilla wafers, and bananas. After a few layers of each, pour a small layer of pudding mixture over it. Then add a few more layers of wafers and bananas, then pour a part of the mixture over it. After all the pudding is gone, cover and chill. It's best if chilled for 24 hours.

    Black Forest Punchbowl Cake

    You can bake a chocolate cake if you really want, but I start with an Enteman's chocolate loaf cake, or Marble loaf. Pound cake or angelfood work too.





    Cut the cake into bite sized pieces. Put a layer of cake in the bottom of a punch bowl (if you want a lot of servings) or a trifle bowl (for a smaller amount). On top of that put a layer of cherry pie filling, a layer of chocolate pudding, and a layer of Cool Whip. Make as many layers as you want, as you have stuff for. You can shave some chocolate for a pretty topping, or drizzle some chocolate syrup on the top if you like.





    I use 1 loaf cake, 1 or 2 cans of pie filling, 1 package of pudding, 1 8-oz container of Cool Whip in the trifle bowl, or 2 of everything for a punch bowl. Usually I go to a dollar store and get 3 cans of pie filling for $1 each, rather than one big can at the grocery store for about $2.89. Most cans of pie filling are high on juice and skimpy on cherries.





    You can also vary this by using vanilla pudding and blue berries, or something like that.





    It's pretty and impressive and basically, you made some pudding and cut up some cake.





    Apple Spice Cake





    Ingredients:


    Spice cake mix


    Whatever the mix calls for


    Apple pie filling





    Mix up a spice cake, following the directions on the box, EXCEPT reduce the liquid by half. Pour it into a 9X13 pan, as per the box directions. Add a can of apple pie filling, but not all the juice. Spread the apples out and bake as the box indicates. Again, I use two cans of cheap pie filling, avoiding a lot of the liquid.





    You'll have to increase the baking time, checking about every additional 10 minutes. The pie filling makes this a very dense cake, and that's what takes so long to bake. Once the cake starts pulling away from the sides of the pan, it's probably done. If it's too soggy, next time use less of the goo from the pie filling. I sift some powdered sugar on top of this cake, because icing was really just too much.





    You can also use chocolate cake and cherry pie filling. This is kind of like a chocolate covered cherry cake. I do put chocolate icing on this one. I used to use Pillsbury Hot Fudge icing, but I can't find it anymore, so whatever chocolate canned icing is on sale. People ask me to bring this one to dinner. Sometimes I make it in mini muffin tins, but you have to spoon out one or two cherries into each little cup then. Too much trouble.

    Strawberry Torte --








    .INGREDIENTS


    11 ounces cream cheese, softened


    3/4 cup white sugar


    2 teaspoons vanilla extract


    1 pint heavy whipping cream


    2 (12 ounce) packages ladyfinger cookies


    1 (16 ounce) package frozen strawberries


    1 tablespoon cornstarch











    ..DIRECTIONS


    1.Strain strawberries and set aside, reserving juices. In a saucepan bring cornstarch and strawberry juice to a gentle boil. Remove from heat and let cool.





    2.Whip cream cheese, sugar, and vanilla together.





    3.In a separate bowl beat whipping cream until stiff peaks form. Fold whipped cream into cream cheese mixture.





    4.Arrange ladyfingers around sides and bottom of the 8 or 9 inch springform pan, standing ladyfingers lengthwise around sides of pan. Pour 1/2 of the filling into the pan, then place a layer of ladyfingers on top of filling. Pour remaining filling over ladyfingers.

    Serves 2





    INGREDIENTS





    450g of fresh strawberries


    1 tablespoon of sugar


    250g of meringue


    250ml of cream





    METHOD





    Wash the strawberries, remove any stalks and chop them into quarters. Break or chop the meringue into rough 2cm (1 inch) pieces.





    Put the strawberries in a bowl. Sprinkle over the sugar. Mix together.





    Pour the cream into another bowl. Lightly whip the cream. Don’t over-do it: it should still be pourable.





    Add the strawberries to the cream, or vice versa. Add the meringue pieces. Mix together and serve.





    ADDITIONS %26amp; ALTERNATIVES





    Use ready-made meringue, especially if it’s broken and/or reduced in price.





    If you make your own meringue, this is the dish to practice with. If they weep, crack or even collapse, you can still use them in this. However, you do have to make it a day in advance.





    For the romantic version, top with a large strawberry and offer this to your partner.





    An authentic Eton mess uses strawberries, but other summer fruits work well.

    HISTORICAL NOTES





    Eton mess originated at Eton College in the 1930’s, when a mixture of either strawberries or bananas with cream or ice cream, all stirred together (hence the name ';mess';), was served in the school’s “sock shop” (tuck shop). One anecdotal story is that the dessert was ‘invented’ by a Labrador dog, when it sat on a picnic basket in the back of a car. With the later addition of the meringue, it has evolved into the unashamedly wicked, yet still quintessentially English, summer dessert. It is traditionally served at Eton College's annual prize-giving celebration picnic on what is still called the ';Fourth of June”, despite actually taking place on the last Wednesday in May.
    This is SUPER easy and you can also DOUBLE it for the picnic.


    CHOCOLATE DELIGHT





    In order for this recipe to go smoothly make sure your cream cheese and butter are extremely soft.





    FIRST LAYER:





    1 c. flour


    1 stick butter, softened


    1/2 c. pecans (chopped well)





    SECOND LAYER:





    1 c. confectioners' sugar


    8 oz. cream cheese, softened


    1/2 lg. (12 oz. container) Cool Whip





    THIRD LAYER:





    2 pkg. (3 1/2 oz.) instant chocolate pudding


    3 c. milk





    First layer: combine ingredients until crumbly and pat into 8 x 12 inch baking dish. Bake at 350 degrees for 15 minutes or microwave on high for 5 minutes. Cool.





    Second layer: Mix sugar and cheese until light and fluffy and fold in Cool Whip. Spoon onto crust.





    Third Layer: Combine until smooth. Spread over second layer.





    Fourth Layer: Spread remaining Cool Whip on top, then sprinkle with pecans. Refrigerate. Serves 8.





    NOTE: Instead of putting pecans on the top, put strawberries.


    Also you can use just vanilla pudding OR chocolate pudding if you like


    Final note: NOTE that TWO packages of pudding to only THREE cups of milk.
    Stuffed Strawberry Picnic Queens





    12 large, fresh strawberries, washed


    3 oz cream cheese, softened


    2 Tbsp. confectioner's sugar


    1 Tbsp. sour cream


    fresh mint leaves for garnish (optional)





    Remove stems from strawberries to form a flat base. Place berries on cutting surface, pointed end facing up. With a sharp knife, carefully slice each berry in half vertically to within a 1/4 inch of base. Cut each half into three wedges to form 6 petals. (Don't slice through the base.) Pull petals apart slightly.





    In a small bowl, combine cream cheese, powdered sugar and sour cream; beat until light and fluffy. With a pastry bag (or plastic zipper bag) and star tip or small spoon, fill strawberries with cream cheese mixture. Garnish with a bit of mint leaf.





    You can also sue strawberry-flavored cream cheese.

    1-box White Cake mix


    1 small box strawberry jell-o


    ½ cup frozen strawberries, thawed

    1 cup oil

    1/4- cup butter, room temp


    ½ cup frozen strawberries, thawed





    CAKE: Preheat oven to 325ºF. Mix jello and cake mix together, add water and oil; mix on med. speed. Add eggs, one at a time, beating well. Add berries. Bake 30 to 45 minutes in greased/floured 9 x 13 baking pan.





    ICING: Cream butter, powdered sugar and strawberries together. Spread on cooled cake

    --1 container Cool-Whip Free


    --Strawberries (optional and not included in nutrition information)








    Directions





    In food processor, process 1 pkg of oreo cookies into crumbs. Remove 1/2 c. crumbs; reserve. Add 5 tsp. water to crumbs in food processor; process until crumbs come together. Press into bottom of 8'; round pan (or whatever is available); freeze 30 minutes or until set.


    Spread strawberry ice cream over crust; sprinkle with 1/2 of reserved crumbs. Freeze 1 hour or until set.


    Spread chocolate cream over crumbs. Sprinkle remaining crumbs on top of chocolate layer; freeze at least 4 hours or overnight--until firm.


    Spread Cool-Whip over the cake as a ';frosting.'; Freeze until Cool-Whip is firm.

Combine milk and egg yolks; mix well. Add to crumb mixture, stirring just until moistened. Divide and pat into two greased 9-in. round cake pans. In a small mixing bowl, beat egg whites until stiff peaks form; spread over dough. Sprinkle with remaining sugar. Bake at 300 degrees F for 40-45 minutes or until golden. Cool 10 minutes before removing from pan to a wire rack. (Layer will be thin.) Cool completely. Place one cake layer on a large serving plate; spread with half of the whipped cream. Spoon half of the strawberries over cream. Repeat layers. Garnish with mint if desired

    My stepfather is hispanic, the most common dessert I ever saw mexicans eat was a desert called milk rice. It's really good, not to sweet, but creamy!! Very good. You can use long or medium grain rice, I prefer medium, it makes it that much creamier. It's simple. Boil about two cups of rice, with six cups of milk(3 parts liquid per cup), add a few cinnamon sticks for more flavor. Bring to a boil, turn down heat to med and simmer, you'll know when the rice is cooked well when it absorbs most of the milk, stir occasionally. Immedietly after that, add a can of condensed milk, three cups of regular milk, 1/2 cup sugar, cook it about 5 min more until it is hot, stirring to mix. You can add a tsp of vanilla flavoring to it too. Take out the cinnamon sticks. Serve in bowls hot!





    You can cook it how you like. It's really good, this is just my recipe for it.

    6 eggs


    14 oz (400 grams) condensed milk


    28 oz (800 mL) milk


    1 teaspoon vanilla extract


    a pinch of salt


    4 tablespoons sugar


    1 tablespoon water





    In a large bowl, mix the eggs, condensed milk, milk, a teaspoon of vanilla extract, and a pinch of salt. Mix until completely homogeneous.


    Mix 4 tablespoons of sugar and 1 tablespoon of water in a small pan or pot. Melt until dark brown.


    Coat a large glass bowl with the molten sugar and let cool for 1 minute. Add the mixture that you prepared in Step #1 to the bowl.


    Place bowl on a shallow tray with water.


    Bake at 400潞F (205潞C) for 40 minutes.


    Let cool for 5 minutes. Refrigerate for at least 3 hours.


    With a knife, loosen the edges of the flan from the bowl. Then, turn bowl on a serving plate.


    Evaporated milk is also commonly used instead of regular milk

    DIRECTIONS


    Preheat oven to 400 degrees F (200 degrees C). Line a 10x15 inch cookie sheet with aluminum foil.


    Place crackers in a singe layer over prepared cookie sheet. Use more or fewer crackers as needed to cover the bottom of your pan.

    yes this does oh my gosh let me see as I recall my mom made a layer of saltine crackers and then melted butter and sugar and then pour the melted sugar and butter mixture over the crackers and then she put it in the oven for a few minutes and then you cool it in the fridge .     Saltine crackers


    1 cup brown sugar


    Pecan pieces


    1/2 cup butter


    12 oz. chocolate chips





    Line cookie sheet with foil; butter heavily.





    Place crackers side by side to cover cookie sheet, salted side up.





    Combine butter and brown sugar and cook until it boils and bubbles (3-4 minutes).





    Pour over crackers; bake 7 minutes at 375 degrees.





    Remove from oven and sprinkle with chocolate chips. Spread chocolate with spatula. Sprinkle with nuts and press into chocolate with spatula.





    When cool; break into pieces and enjoy!
