Need to find a recipe for a easy diabetic dessert?

My husband just discovered he's diabetic....I would like to find a great yet easy dessert dish to make for thanksgiving. Need to find a recipe for a easy diabetic dessert?
Chocolate Cheesecake (Diabetic)





Margarine for pan


15 oz. part skim milk Ricotta cheese


1 1/2 c. (12 oz.) light cream cheese, softened


1 whole egg


2 egg whites


1 c. unsweetened apple juice concentrate


3 tbsp. unsweetened cocoa


1 tbsp. cornstarch


1 tbsp. sugar


1 tsp. vanilla extract


2 tsp. unsweetened cocoa (for topping)





Preheat oven to 350 degrees. Lightly grease bottom and sides of a 9 inch spring-form pan. Wrap outside of pan with aluminum foil. In the bowl of a food processor or blender, puree all ingredients until smooth. Do in 2 batches, if necessary. With a rubber spatula, scrape mixture into prepared pan. Place on a baking sheet. Bake 45 minutes. Turn oven off. Leave in the oven with door closed for 1 hour. Remove and refrigerate. Before unmolding and serving, let stand at room temperature for 10 minutes. Sift 2 teaspoons unsweetened cocoa over the top. Slice with a knife that has been warmed in hot water. Serves 12.

Splenda Pumpkin Roll:


Cake:


Pam or other non stick cooking spray


3 large eggs at room temp


1/2 cup splenda for baking or granulated splenda


1/4 cup light corn syrup


3/4 cup canned solid-pack pumpkin


1 tsp fresh lemon juice


1/2 tsp baking powder


3/4 cup all purpose flour


1 tsp baking powder


1/2 tsp salt


2 tsp ground cinnamon


1 tsp ground nutmeg


1/2-1 tsp ground ginger


2 tbsp confectioners sugar for rolling the cake and more for garnish of desired.





Cream Cheese Filling:





1-8 oz pkg reduced fat cream cheese-at room temp


4 tbsp unsalted butter-softened


1/2 tsp vanilla


1/2 cup granulated splenda-or 50/50 baking mix


1/2 cup';powdered sugar'; (mix 1/2 cup splenda with 1 tbsp cornstarch in the blender and pulse until powdered)





Position rack in the center of the oven and preheat the oven to 350. Lightly spray a 15x10x1 inch jelly roll pan witht the cooking spray. Line the bottom of the pan with waxed or parchemtn paper. Grease and flour the parchemtn paper as well.





To make the cake: beat the eggs in a large bowl with electric mixer until tripled in volume (about 5 min). Gradually beat in 1/4 cup splenda, and corn syrup and beat for 2 min more. Reduce speed to low and gradually add the lemon juice, and pumpkin, beat until well combined.





3.Sift together the flour, cinnamon, nutmeg, ginger, salt and baking powder, gradually fold four mix into the pupmkin batter. Using a metal spatula (cake decoratoe spatula or even a butter knife) and spread evenyl into the the pan.





BBake at 350 for about 12 min or until it springs back when pressed int the center with finger. Let cool for 2 min. Run kife around egde of pan to release the sides.Sprinkle confectioners sugar over a clean kitchen towel. Invert and unmold the cake onto towels. Peel back paper and then replace it, roll the cake and towel starting at the short end. Set aside to cool seam side down until completly cool.





To make the filling beat the cream cheese, butter, and vainll on medium until well combined. Add the splenda and ';powdered sugar';, beating until blended and smooth.





To assemble the cake unroll it and discard the paper. Spread cream cheese filling over the cake and re-roll. Transer to a serving platter, seam side down and slice at a slight diagnal anglle.



My dad is also diabetic and my mom loves to bake so she adapted a lot of her favorite recipes. You can use splenda for any recipes with sugar in them, but it doesn't substitute for brown sugar. My favorite sugar free recipe is apple pie. My mom just uses sweet apples and doesn't add any sugar, but a little cinnamon. It really tastes just the same as regular apple pie. Of course there is natural sugar in the apples, so my dad can't eat the whole pie like he would like :-P

Type in diabetic dessert in the google search. They have so many different recipes. My dad is diabetic as well, and that helped my mum out.
My sister, and I are both type 1 diabetics. She makes this amazing jello cheesecake.
