What's your favorite recipe for a dessert, cake, pudding, or cookie?

Hi Liz,


Your question is good but to me it sounds like a person asking a mother ';which one of your children is your favorite';? Lol!





Having a sweet tooth, I just love desserts and not just cakes and puddings but some Indian mithais as well.





If I have to narrow it down it probably will be





1) Chocolate cake


2)Black forest


3)Sticky toffee pudding


4)Trifle


5)Ras malai.





Nope on second thoughts I can't make a list. I love them all. Instead I will tell you the ones I don't like. It is an Indian dessert 'mithai' called mysore pak.

Love Cake


Beat on a platter the whites of ten eggs to a stiff froth. Stir into them one and one-half goblets of flour, sifted six times, adding a teaspoonful of cream of tartar in last sifting. Bake immediately in three large jelly cake tins. Use only two of these, and reserve the other for a strawberry or any other kind of fruitcake.





For filling take one pint of very rich cream, add to it two tablespoonfuls of pulverized sugar and a teaspoonful of vanilla. Whip to a stiff froth and color pink with Dr. Price's fruit coloring. When the cakes are cold, spread between the layers and pile also on top of the cake.





Before you begin to whip the cream see that it is very cold. It should be set in a bowl of ice while whipping, especially in the summer.








Pink Cream Cake


Take three eggs and one cup of pulverized sugar. Beat the eggs and sugar to the consistency of batter and then add half a cup of cold water, two cups of flour, and two teaspoonfuls of baking powder, sifted twice. Color with fruit coloring. Bake in three layers and fill with whipped cream, sweetened to taste and flavored. Must be eaten the same day. Keep in ice-chest. Use abut a teaspoonful of Dr. Price's fruit coloring, and if not sufficiently colored, add more. Color the dough only.








Ribbon Cake Recipe


Two cupfuls of sugar, one of butter, one of milk, four of flour (rather scant), four eggs, half a teaspoonful of soda, one of cream of tartar. Beat the butter to a cream. Add the sugar, gradually, beating all the while; then the flavoring (lemon or nutmeg). Beat the eggs very light. Add them and the milk. Measure the flour after it has been sifted. Return it to the sieve, and mix the soda and cream of tartar with it. Sift this into the bowl of beaten ingredients. Beat quickly and vigorously, to thoroughly mix, and then stop.





Take three sheet pans of the same size, and in each of two put one-third of the mixture, and bake. To the other third add four teaspoonfuls of cinnamon, a cupful of currants and about an eighth of a pound of citron, cut fine. Bake this in the remaining pan. When done, take out of the pans. Spread the light cake with a thin layer of jelly, while warm. Place on this the dark cake, and spread with jelly. Place the other sheet of light cake on this. Lay a paper over all, and then a thin sheet, on which put two irons [or something heavy]. The cake will press in about two hours.








Valentine Dream Cakes





Cream well half a cup butter, add a cup and a half of sugar, half a cup cold water, two cups flour sifted twice with two teaspoonfuls baking powder, a teaspoonful lemon extract, and the stiffly beaten whites of six eggs. Bake in small shapes, frost, with boiled frosting, and ornament with tiny pink candies.








Harlequin Cake Recipe





Harlequin cake recipes were old-fashioned favorites. Harlequin cakes in pastel colors are perfect for celebrating St. Valentine's Day.








1/2 a cup of butter, 1-1/2 cups of sugar, 2-1/2 cups of flour, 1 cup milk, 4 eggs, 2-1/2 teaspoons baking powder, 1 teaspoon vanilla. Beat butter to a cream, add sugar, and beat again, now add the yolks of eggs and beat well, add the flour and milk alternately, putting in the baking powder with the last quantity of flour. Whip whites of eggs to a stiff froth, add them very lightly.





Take cake mixture and color in three colors, bake twenty minutes in separate tins in a moderate oven. Turn out, and when cool spread two with the following lemon mixture, place one over the other, and ice with hot icing:





Lemon Mixture: Rind and juice of 1 lemon, 1 cup sugar, 1 egg, 1 tablespoonful cornstarch, 1 gill water. Mix together the water and cornstarch, and cook them for five minutes; add sugar, lemon, and egg, and cook one minute longer.

this may sound odd, but its soooo good! apple cake with caramel sauce and crunch topping


find an apple cake recipe on any recipe site (it should include cinnamon and vanilla, but substitute whatever they list for vanilla as 1 Tbs maple syrup) for the cake. pretty much all the regular apple cake recipes turn out the same, may want to add a TB of milk too to make it extra moist





for the crumb topping, find the betty crocker recipe for apple crisp. you will make it as listed MINUS THE APPLES. just put the crumb mixture in small clumps on a pan and bake it in the oven for 25-30 mins.





for the caramel sauce, melt 4TB margarine, 1TB maple syrup, 1/3 c brown sugar and 2TB milk or coffee cream or whipping cream(recommended) and a dash of salt. boil and stir constantly for 3 mins, let sit for 3 mins in the fridge. boil again for 3 more mins and let cool for 3 mins. (you will want to make this each time you serve the cake, i mean if you have leftovers, you will want to make another batch of this...this makes about 4 servings worth)





drizzle the caramel over the cake and add crumb topping. i

My all-time fave is white chocolate cake





2 1/2 cups all-purpose flour


1 teaspoon baking soda


1/2 teaspoon baking powder


1/2 teaspoon salt


6 (1 ounce) squares white chocolate, chopped


1/2 cup hot water


1 cup butter, softened


1 1/2 cups white sugar


3 eggs


1 cup buttermilk





6 (1 ounce) squares white chocolate, chopped


2 1/2 tablespoons all-purpose flour


1 cup milk


1 cup butter, softened


1 cup white sugar


1 teaspoon vanilla extract





1.Preheat oven to 350 degrees F (175 degrees C). Sift together the 2 1/2 cups flour, baking soda, baking powder and salt. Set aside.





2.In small saucepan, melt 6 ounces white chocolate and hot water over low heat. Stir until smooth, and allow to cool to room temperature.





3.In a large bowl, cream 1 cup butter and 1 1/2 cup sugar until light and fluffy. Add eggs one at a time, beating well with each addition. Stir in flour mixture alternately with buttermilk. Mix in melted white chocolate and 1 1/2 teaspoon vanilla.





4.Pour batter into two 9 inch round cake pans. Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center of the cake comes out clean.





5.To make Frosting: In a medium bowl, combine 6 ounces white chocolate, 2 1/2 tablespoons flour and 1 cup milk. Cook over medium heat, stirring constantly, until mixture is very thick. Cool completely.





6.In large bowl, cream 1 cup butter, 1 cup sugar and 1 teaspoon vanilla; beat until light and fluffy. Gradually add cooled white chocolate mixture. Beat at high speed until it is the consistency of whipped cream. Spread between layers, on top and sides of cake.
Easy Fruit Cake


Ingredients


1 kg mixed dried fruit


2 cups orange juice


2 1/2 cups self raising flour


2 teaspoons each: mixed spice, essence of choice


Method


Soak the fruit in orange juice overnight.


Preheat the oven to 160 C


The next day add self raising flour spice and essences as desired.


Pour into prepared pan and


bake 1 1/2 hrs 160 deg. (not fan bake)


Put a piece of greasproof paper over it while cooking.


Beautiful moist cake.








Serve hot with ice cream or warm custard.
Chocolate Mousse Cake





PREP TIME 20 Min


READY IN 5 Hrs 15 Min





INGREDIENTS (Nutrition)


3/4 cup cold water


1/2 cup corn syrup


1/2 cup sugar


1/4 cup cornstarch


1 1/2 (6 ounce) packages BAKER'S Bittersweet Baking Chocolate, coarsely chopped


1/4 teaspoon salt


1/4 cup butter or margarine


3 large eggs, lightly beaten


1 cup whipping cream


Boiling water





DIRECTIONS


Preheat oven to 350 degrees F. Grease and flour 9-inch springform pan. Mix cold water, corn syrup, sugar and cornstarch in large heavy saucepan. Cook on low heat until sugar is dissolved, stirring constantly with wire whisk. Add chocolate and salt; increase heat to medium. Continue cooking until chocolate is completely melted and mixture just comes to boil, stirring constantly. Remove from heat. Add butter; stir until melted. Transfer mixture to large bowl. Refrigerate 15 min. or until cooled, stirring occasionally. (Mixture can still be slightly warm to the touch.) Add eggs; mix well.


Beat whipping cream in small bowl with electric mixer on high speed until soft peaks form. Add to chocolate mixture; stir gently until well blended. Spoon into prepared pan. Place pan in larger shallow baking pan, then place on center rack in oven. Carefully pour boiling water into larger pan to come halfway up side of springform pan.


Bake 45 min. or until center is set. (Top will feel slightly firm to the touch.) Remove springform pan to wire rack. Run knife or metal spatula around rim of pan to loosen cake; cool before removing rim of pan. Cover top with plastic wrap. Refrigerate 4 hours or overnight. Garnish with chocolate curls, if desired. Store leftover cake in refrigerator
get a pancake, spread chocolate sauce across it, then slice up some banana and put it on top evenly, roll it up, then drizzle with maple syrup, with a dollop of ice cream on the side, then put in the microwave for 10 seconds (no more than that or the ice cream will completely melt), the choc sauce melts and blends with the banana, and the maple syrup soaks into the pancake.





my fav dessert, i had it after dinner last night.
I love apple and cinnamon cake.


225g soft marg


225g light muscavado sugar


3 eggs


100g sultanas


225g sr flour


2 tsp baking powder


400g apples peeled cored and grated ( u can use either eating or cooking depending how sweet you want it)


1-2 tsp cinnamon


and all you do is mix all the ingredients together apart from the grated apple and cinnamon. put half in a 9 inch round deep tin then layer the apple and cinnamon on top of that , then on top of that the rest of the cake mix. put in oven for 1 1/4 to 1 1/2 hours at 180 . yum!
I like making baklava. It is time consuming, and expensive, but it's great stuff!





I have a great recipe for it from an episode of Good Eats. It uses clarified butter, rosewater, and a mix of pistachios, walnuts and blanched almonds.
Pudding!





I Love steamed sponge with custard!
