Not sure if you want to do it ALL from scratch... but At the grocery store, under the apples bin ( I found it at VOns) there is an apple crip thing. You take a bunch of Granny smith and put this graham craker surgary thing on it. It carmelized when I baked it. Buy a good tart variety of eating apple,like garnny smiths, slice,coer and peel. what ever you do, don't put the slices in water. Heat some clarified butter and fry the apples, on one side turn them over and add sugar, the whole thing should become a gooey mess. Then serve with cream poured over it and you will die.

Caramel Apple Cake

Talk about yummy. This is very rich, and your sure to have requests for this. Consider using a caramel ice cream topping if you can not find the wrapped caramels.
Ingredients:
1 pkg. (2 layer size) yellow cake mix
1 pkg. (4 serving size) vanilla or French vanilla instant pudding
1 C. water
4 eggs
1/3 C. vegetable oil
3 Granny Smith apples, peeled and coarsely chopped
20 Kraft caramels unwrapped
1/4 C. milk
Preparation:
Preheat oven to 350 degrees. Grease and flour a 12 cup fluted Bundt pan or a 10 inch tube pan. Beat cake mix, dry pudding mix, water, eggs and oil in a large bowl with an electric mixer on low speed until blended.
Beat on high speed for 2 minutes. Gently stir in apples. Pour into prepared pan. Bake 50 minutes to 1 hour or until toothpick inserted in the middle comes out clean. Cool 20 minutes and remove from pan. Cool completely.
Microwave caramels and milk in a microwaveable bowl on HIGH 1 陆 minutes, stirring every 30 seconds until blended. Cool 10 minutes until
slightly thickened then drizzle over cake. I used the Smuckers syrup here and just drizzled it all over. Serves 16.
